  1. Prepare 2 litre full creame milk
  2. Make ready 3 tbsp lemon juice or venegar
  3. Prepare 2 cup cottage cheese/chhena/chhana
  4. Get 2/3 cup sugar
  5. Take 2 tbsp semolina
  6. Get 1 tsp ghee/clarified butter
  7. Get 8-10 green cardamom
  8. Get 1/2 tsp baking powder
  9. Get 1/2 cup chhena water

  11. Prepare As needed raisins
Steps to make Chhenapoda:
  1. Start boiling the entire milk in a deep vessel till bubble comes from the milk & then reduce the flame.
  2. Start adding lemon juice or venegar to the milk & stir with a ladle to mix the souring agent properly to curdle the milk.
  3. The milk will start curdling within 1/2 mint.Switch off the flame & cover the vessel with a lid & wait for 5 mint.
  4. Strain the cottage cheese /chhana using a strainer but keep 1/2 cup of the water separated from the chhena for future use.
  5. Do not squeeze the chhena/cottage chhese much since we need a soft mixture for making chhenapoda.
  6. Take warm chhena in a bowl & add semolina, baking powder & sugar & mix lightly.Leave the mixture for 5 min.This will help the semolina to absorb water from the chhena.
  7. Preheat the oven in 180 degree centigrate for 10 min.Now start kneading it using your hand for 5 min to make a smooth paste until sugar dissolves completely.
  8. Now add little chhena water to the mixture.I have added 3 tbsp(around) to make a semithick mixture like a cake mixture.
  9. Now fry cashewnuts & raisins in little ghee & add those to the chhena mix & mix lightly.
  10. Take a baking tin & line it with a parchment paper & pour the mixture in the baking tin.
  11. Bake it in 180 degree centigrate for 30 to 40 min.
  12. After 30 min of baking insert a toothpick in the middle of the chhenapoda & check whether it is done or not.If required bake for some more time.
