Steps to make Cheese Fatayer:
  1. In half cup of warm milk add sugar and yeast. Keep aside for 5 to 8 minutes to activate the yeast.
  2. In a big mixing bowl pour flour and add salt and butter. Mix well.
  3. Make a hole in the centre of the flour and pour the activated yeast.
  4. Mix slowly with a spatula to incorporate.
  5. Now slowly add warm water to make a soft dough. Don't add all the water at a time. Add slowly and mix. You may not need all the water to make the dough.
  6. Now knead the dough for 5 minutes. Rub some oil to the dough and cover it. Keep it in a warm place for an hour or till the dough becomes double in size.
  7. In the meantime make the filling. Mix feta cheese with chopped parsley, mint and oregano/thyme and keep aside.
  8. After an hour take out the dough in a work place or kitchen platform and knead well by stretching and folding method for 10 minutes. This will help to make a soft pastry.
  9. Divide the dough into half. Take the 1st half and roll into a rectangle 1/2 inch thick sheet.
  10. Spread half of the filling over the sheet and roll it to form a log.
  11. Cut the log in to 1.5 to 2 inches length, or less according to your choice. Brush with milk.
  12. Using a wooden stick or back side of a ladle make an indentation or dent in the middle of each piece.
  13. Pre heat the oven at 200 degree Celsius for 10 minutes.
  14. Place each piece of fatayer in a baking tray and place them in the middle rack of the oven.
  15. Bake them for 20 to 25 minutes or till golden brown.
  16. Let them cool down and enjoy.
