- Take 1 kg cheeseweed greens

- Make ready 1/4 cup coarse bulgur
- Get 1/4 cup olive oil

- Pick out the yellow leaves from the cheeseweed greens (if any) then wash & dry from excess water. Chop the leaves
- Next peel & dice the onion. Wash the bulgur and strain
- In a large saute pan, add the olive oil & saute onion until it turns a golden colour. Add the cheeseweed greens & stir for 2-3 minutes until wilted, add in bulgur and salt to taste
- Stir the ingredients, then simmer over low heat for 10 -15 minutes
- Transfer to a flat serving dish & garnish with crispy carmelized onions. Serve cold with a squeeze of lemon juice and fresh spring onions
